Silent Mind

My life is full of words. If I’m not writing an article, I’m writing in my journal. If I’m not blogging here, I’m blogging here. If I’m in the shower or walking the dog or cooking a meal, I’m “writing” in my head. Other times I’m reading books (more words) and magazines and newspapers.

Mostly, this is good. I love words. But I realize it’s also important to empty my mind of the 26 letters of the alphabet that are constantly buzzing around in various arrangements in my head.

We live in a world with constant noise: TV, construction, motors, whirring coffee machines – even tranquil spas and yoga classes play music. What’s that about?

Anyway, as part of my home yoga practice, I’m trying to incorporate a time to be silent. I’m not chanting a mantra (more words) or telling myself, “When this is over I need to write that thought down!”

Of course it seems our brains are always full of thought (at least my female brain is…my husband swears he’s thinking of “nothing” if I ask him. Actually, since I’m on the topic, what do babies think about? Can you have thoughts without language?)

Anyway, sitting in silence is an attempt to empty my mind…and to simply experience the quiet. A need that my bloggy friend Kathryn describes as a part of our days that is sorely missing in these times. It’s nice to invite it back into my life.Š

Baby Green Salad with Dates, Walnuts and Wasa

Ingredients

1 package (4 ounces) mixed baby salad greens
1 cup fresh dates, chopped
1 tablespoon oats
1 cup toasted walnuts, coarsely chopped
3 tablespoons canola oil
1 tablespoon red wine vinegar
Salt to taste
Freshly ground black pepper to taste
6 pieces Wasa Multi Grain Crispbread

Directions

Coat dates by rolling in oats to prevent sticking together. Set aside.
Place mixed greens in a salad bowl. Add walnuts, dates, canola oil, red wine vinegar, salt and pepper.
Toss greens and serve as salad with crumbled Wasa Crispbread pieces or spoon onto individual whole crispbreads.

Brown Rice Risotto

The other night I made brown rice risotto.

Well, kinda.

I ripped the recipe out of O magazine awhile ago and have been hanging onto it. The chef/writer, Colin Cowie, promised he was sharing a “labor-free” variation of the dish that usually requires a lot of stirring. Labor-free – now that’s my kind of meal.

Here’s what I did: I cooked 1 cup of brown rice in an organic free-range chicken broth. Meanwhile, I cooked mushrooms in a skillet for a few minutes (the recipe calls for an assortment of cremini, white jumbo, and shiitake, but we only had one type) and then I set the mushrooms aside. When the rice was ready, I mixed in the mushrooms. Then I mixed in 1 cup of grated parmesan cheese. I served it with a crisp greens salad. It was delicious. You can use other vegetables (asparagus) or ingredients (seafood) in place of mushrooms.

It’s one of those meals that will go into the “let’s make this again” category in my recipe box. Š
