Not Quite Tuna

Tonight for dinner I made tuna salad…without tuna…or mayo.

How, you might ask, did I make such meal?

With vegetables and seasoning.

I’m trying to incorporate as many veggies into my diet as I can, so I’m always on the lookout for new recipes. One of the most interesting I’ve seen so far is “Better than Tuna” from this book. First, I whipped out my food processor. Then I discovered my food processor was broken, so I whipped out a knife and cutting board. I finely chopped three big carrots, two celery stalks, a quarter of an onion, half a red pepper, and a tomato. I drained the tomato and threw all the veggies in a bowl.

For the seasoning I mixed in one-half teaspoon Celtic sea salt, one Tablespoon parsley, one-half teaspoon kelp, and three Tablespoons of Vegenaise.

Looking at the concoction, I wasn’t sure what to think. It looked pretty appetizing, but there was only one way to find out for sure. I served the “tuna” in a toasted whole wheat hamburger bun. I also set out a platter of blue corn tortillas with hummus (I cut the tortillas into “chips” and baked them in the oven first). To drink? Fresh vegetable juice.

Numma, numma, numma. It was delicious. I highly recommend it (hopefully your food processor is working though because all that chopping was labor intensive). I’m so excited for lunch tomorrow to eat the leftovers.Š

Turkey and Avocado Wasa Sandwich

Ingredients

3 slices Havarti cheese, sliced thin
½ avocado, sliced thin
3 slices turkey breast
1 teaspoon olive oil
¼ cup tomatoes, finely minced
2 tablespoons purple onion, finely minced
1 tablespoon Italian flat leaf parsley, chopped
Salt to taste
Freshly ground black pepper to taste
3 pieces WASA Hearty Rye Crispbread (may substitute any WASA Crispbread flavor)

Directions

Combine olive oil, tomatoes, purple onion, parsley, salt and pepper in a small bowl. Mix and set aside.
Place 1 slice of Havarti cheese, 1 slice of turkey breast, 3 thin slices of avocado on each crispbread. Top with tomato and onion mixture.

Serves 1

Natural Sugars

So, I’m off to see a naturopath. I’m still trying to figure out the fertility thing, and I’d like to learn more about this healing method of treatment. Diet is the first thing a naturopath evaluates (I think) – so it should be interesting to hear what she thinks of my eating habits. My no coffee, no alcohol, and increased intake of fruits and vegetables seems to be going okay (sure, there’s hiccups along the way, but not too many). But the no sugar plan? That’s tough. I’m off it, then back on it. Off. On. Off. On. OffOnOffOnOffOnOffOn. Lately, in order to satisfy my cravings, I’ve been snacking on a little sweet treat in the late afternoons (mostly chocolate). Sugar depresses the immune system drastically. And after reading up on the potential harm sugar can do to my body (feed cancer cells, contribute to autoimmune diseases, weaken eyesight, and so on) I actually felt fear rising inside me. But while fear can be a strong motivator, what really moves me into action is knowing how healthy and healed and clean I’ll be and feel when I eliminate sugar from my diet. I already know the next step. Instead of satisfying my craving with candy, I should switch to treats that have been sweetened with natural sugars, like maple syrup and raw honey. Okay . . . back to the kitchen to experiment with more recipes.
